Did you know that algae produce about half of all oxygen molecules in the atmosphere? And that one kilogram of fresh algae contains the marine active ingredients from around 10,000 litres of seawater? Algae have amazing properties – which makes it all the more important to protect them.
Kombu (Saccharina latissima) is a brown algae and, like all "Meeresgarten" algae, is sustainably harvested under controlled conditions. Kombu algae is a natural source of iodine and contains glutamic acid, which gives it its popular umami flavour.
Kombu is valued in the kitchen for its delicate, sweet and nutty flavour and enhances the taste of other ingredients. This algae is particularly suitable in combination with legumes, as it increases the digestibility of both ingredients.

Kombu Royal is one of the most iodine-rich edible seaweeds. Therefore, it is soaked in cold water for about 10 minutes before consumption. The algae flakes release a large amount of iodine into the water during soaking, so this should not be reused.
Kombu Royal is wonderful as a baking ingredient or for seasoning dishes, especially fish.
