As a natural component of seawater, iodine or iodide is an important trace element for the metabolism. Brown algae in particular contain larger amounts of this trace element in order to protect against bacterial attack and oxidative stress. Although Germany is widely regarded as an iodine-deficient area, the absorption of large quantities of iodine can have negative effects on people with thyroid disorders. The maximum total daily intake of iodine should not exceed 500 micrograms (Bundesamt für Risikobewertung, 2007).
